- 1 cup(100 grams)old-fashioned rolled oats
- 1 1/2 cups (150grams) homemade oat flour (see notes)
- 1/2 teaspoon+1pinchsea salt
- 1 teaspoonground cinnamon, separated
- 6 tablespoonspasture-raised salted butter, separated
- 6 tablespoonspure maple syrup,separated
- 6medium apples (I like pink lady & granny smith)
INSTRUCTIONS
Preheat oven to 375°F or190°C. Grease a7X11-inch baking dishor a10-inch cast-iron skilletwith pasture-raised butter or ghee.

MAKE THE CRUMBLE
- 1 cup (100 grams) of rolled oats, 1 1/4 cups (125 grams) of oat flour, 1/2 teaspoon of ground cinnamon, and 1/2 teaspoon of sea salt should all be combined in a medium bowl. Mix thoroughly.
- 3 tablespoons of butter should be grated or chopped into small bits. Then, until the butter is dispersed and the mixture is crumbly, cut the butter into the dry ingredients with your fingers. Add three tablespoons of maple syrup next and combine gently. Place a reserve in the fridge.
MAKE THE FILLING
- 6 apples should be cut into bite-sized chunks. Peel if you like. Place aside.
- In a big bowl, melt 3 tablespoons of butter. Add the remaining 1/4 cup (25 grams) of oat flour, along with 3 tablespoons of maple syrup, 1/2 teaspoon of cinnamon, and a dash of sea salt. Combine by whisking, then add the apple slices and toss to coat.
PUT IT ALL TOGETHER
- The crumble mixture should be taken out of the refrigerator and distributed equally over the coated apples after you have poured the coated apples onto the prepared baking dish.
- Bake for 35 to 45 minutes, or until the crumble is gently brown and the apples are tender. Watch the crumble carefully during the final 10 minutes to prevent burning. Serve with a scoop of your preferred ice cream while still hot and enjoy.

Parfait

- 1tspcoconut oil
- 1/2tspcinnamon

- 150gcoconut yoghurt
Crumble
- 1/2cupalmond meal (60mg)
- 1/2cuporganic desiccated coconut (45g)
- 1tbspcoconut oil, melted
- 1tbsp(20g) almond butter
- 1/2tspvanilla bean powder (or good quality vanilla extract)
- 1/2tspcinnamon
- 1pinchnutmeg
- 2tbsp(20g) flaked or slivered almonds
Instructions
- Make crumble first and preheat the fan-forced oven to 170°C. Melt almond butter and coconut oil in a small pot.
- Almond meal, coconut, vanilla, cinnamon, and nutmeg should be combined in a mixing dish before adding heated oil or almond butter. Together nicely. Add almond flakes and stir.
- On a baking sheet, spread the crumble, and bake for 10 to 12 minutes, or until brown. (Check halfway through to avoid burning.)
- Apples, cinnamon, and nutmeg are added to a small pot of melted coconut oil in the meantime. As you cook the apples over low to medium heat, stir often.
- Place layers of apple, yoghurt, and crumble in glasses to create parfaits.

Directions
- To make the pie crust:
- The dry ingredients should be combined in a sizable bowl and put aside. Using a pastry cutter, combine the dry ingredients and coconut oil until the mixture resembles coarse crumbs. Adding a tablespoon at a time of the ice water. Gently mix the dough with a wooden spoon while adding more water until it comes together (squeeze it together — if it crumbles, you need to add more water). With your hands, combine the dough and form it into a flat disk. Refrigerate the dough for 30 minutes after loosely wrapping it in plastic wrap.
- Set aside a 9-inch pie tin that has been coconut oil-greased. Take the dough out of the refrigerator, and cover a work area with a big piece of parchment paper. Place the dough on top of floured parchment, and leave it for 5 to 10 minutes to rest. To prevent sticking, flip the dough carefully as you spread it out to an 11-inch circle using a rolling pin. Put the pie pan on top of the dough and carefully slide the parchment paper with one hand. With your other hand still holding the pie pan’s top, quickly and carefully flip the parchment, invert the dough into the pan, and then delicately peel it back. Trim the edges after pressing the dough into the pan. If the dough is torn, fix it with trimmed dough or press the dough back together. While preparing the filling and crumble, form the crust and place the pie pan in the refrigerator.
- For the crumble and filling
- Core and peel apples. Each apple should be cut into quarters, then half moons with a thickness of around 1/4 inch. Lemon juice should be combined with fresh ginger and apples before being placed aside. Combine the sugar, cinnamon, arrowroot, and salt in a small mixing dish. A bit at a time, sprinkle the sugar mixture over the apples; toss to incorporate. Place aside.
- Mix the oat flour, rolled oats, almond flour, chopped walnuts, and salt to produce the crumble; then, add the coconut oil and continue mixing until the mixture resembles wet sand. Place aside.
- Set the oven to 400 degrees Fahrenheit and take out the refrigerated pie shell. With your fingers, evenly apply the crumble topping over the apple mixture in the pie shell. Fill the pie shell with the apple mixture. Egg wash should be delicately applied to the pie crust’s top using a pastry brush (or milk). Bake pie for 15 minutes in the center of the oven. Bake for 40 to 45 minutes, or until apples are soft when poked with a knife, and crust and topping are golden brown. Reduce heat to 375° F.
- Place on cooling rack after removing from oven. Before serving, let the pie cool fully.
